Ingredients
Unsalted butter, 12 ounces (1 1/2 cups)
All-purpose flour, 5 cups, plus more for dusting
Granulated sugar, 2 cups
Brown sugar, 1/2 cup
Powdered sugar, 1 1/2 cups
Unsweetedned Cocoa powder, 1/2 cup
3 large eggs
Milk chocolate, 1/2 cup, finely chopped
25-30 small chocolate disks, wafers, or coins (optional)
Baking powder, 1 teaspoon
Salt
Vanilla extract, 2 teaspoons
Cornstarch, 3/4 cup
Raspberry jam, 1 cup
Equipment
Electric mixer, handheld or stand
2-3 large mixing bowls
2-3 medium or small bowls
Rubber spatula
Whisk (a large fork will do in a pinch)
Parchment paper for lining trays and rolling (don’t skip this)
Spoons or cookie scoop for portioning
Cookie cutters or a drinking glass for cutting (for linzer cookies, you need a large cutter than is 2 1/2 to 3 inches in diameter, and a smaller cutter that is about 1 inch in diameter. Shapes are up to you)
Rolling pin (or a wine or liqour bottle)
1-3 large baking pans or cookie sheets
