MONDAY - Shortbread

The most basic of cookies involves few ingredients.

Shortbread is great on its own, but is also a vehicle for stronger flavors, like glazes and ganache. We are going to make a vanilla and chocolate version of these cookies.

For the Chocolate Chunk Oatmeal Cookies: choice to omit the chopped pecans and replace with dried cherries, or use both.

WEDNESDAY - Rolled and Piped Cookies

Wednesday introduces some more advanced baking techniques. Homemade versions of cookies usually bought at the store.

Graham Crackers

Milanos

THURSDAY - Bars

Bars sometimes veer into the cake or candy category, but are always associated more with cookies than anything else.

We’ll make the perfect brownie recipe (to me) and a layered fruit bar you can make with your favorite jam and fresh fruit. I’ll be using strawberry jam and rhubarb. See the recipe for flavor ideas.

FRIDAY - Fancy Cookies

Cookies aren’t usually associated with “fancy” or upscale, but these cookies bring us there. We’ll do the incredibly easy Elephant Ear Cookies using store bought puff-pastry and then make rolled Tuile Cookies.

Elephant Ears (no recipe, just have puff pastry and granulated sugar on hand)
