Ingredients
3 large eggs
Milk, 8 oz
Vanilla extract
Cake flour, 2 1/2 cups (to make an all-purpose flour substitute with 2 cups plus 3 tbsp all-purpose flour and 5 tbsp cornstarch)
Granulated sugar, 1 1/2 cups
Rainbow Jimmies or rainbow chips, 1 1/2 cups (Jimmies are the long sprinkles, not the tiny balls. Betty crocker makes a good version that is sold in tubs in most grocery stores.)
baking powder
baking soda
salt
unsalted butter, 24 oz (use a good quality butter that you like the taste of)
powdered sugar, 2 pounds
heavy cream or milk (for thinning frosting, just a few tablespoons)

2 8x2 or 9x2 inch cake pans (or a 9x13) (If you make a 1-layer cake, half the frosting)(for those in the market for cake pans, Magic Line is the best, made in Southern California, but sometimes difficult to fine. Fat Daddio’s is the next best brand).
Electric mixer, handheld or stand
Whisk
2 large bowls
parchment paper (for lining cake pan, don’t skip)
Scale (optional, but useful for acurate baking and portioning of batter into pans)
