Key lime pie is a classic mid-20th century pie that is really pretty simple to put together. It is pretty tart, so I suggest serving with whipped cream to cut the tartness. Key limes are tiny limes, about 1/4 the size of a standard Persian lime. They are often found in latino grocery stores are they are cultivated in Mexico and quite popular in Mexican cooking. Truthfully, I can’t tell the difference between a keylime pie and one made with Persian limes. Feel free to use either. You can also purchase bottled key lime juice online and in some grocery stores. Before class:

Zest and juice your limes (we need 1/3 cup of lime juice). Pro tip: zest before juicing.
