Preparations

Please have butter, eggs, and buttermilk at room temperature.

Do not pre-measure or take any steps to “get ahead.” We will do everything together, step by step.

Substitutions and Adjustments

Where possible, please try to have the correct ingredients. Buttermilk is sold in quarts and we only need one cup. Buttermilk freezes wonderfully, and I suggest freezing your left overs if you do not use buttermilk frequently. The other option is to substitute the buttermilk with 15 Tbsp milk + 1 Tbsp lemon juice. Salted Butter can be used in place of unsalted in the frosting if you prefer. Coffee is a pretty important ingredient in this cake, but it does not make the cake taste like coffee or mocha. Coffee enchances the chocolate flavor f this cake. You can use instant coffee or espresso mixed into hot water. Or, if you’d like, you can use hot water instead. Cocoa Powder if you’d like a deeper, darker chocolate flavor, try to find “dark” or “dutch processed cocoa powder”.
