Shopping List
Ingredients
Unsalted butter, 12 oz
Granulated sugar, 1/2 cup
Golden Syrup or Light Corn Syrup, 3 tablespoons (Lyle’s Golden Syrup is magical and can be found online on Amazon or at specialty food stores like Cost Plus Work Market)
Baking soda
Salt
Coconut extract (optional, but adds a bit more of an authentic flavor)
(for mint oreos, 2 tsp peppermint extract)
All-purpose flour, 2 cups
Dutch-processed cocoa powder, 1/2 cup (this is dark cocoa powder. Hershey’s Special Dark is a blend of dutched and natural, and will work. Ingredients will say “alkalized”.)
Vanilla
Organic powdered sugar, 2 cups (organic is important because it does not contain cornstarch which can makes the filling taste gritty, but regular is okay if you can not get organic.)
Equipment
Bowl
rolling pin (you can use an embossed rolling pin if you’d like, but you still need a smooth pin)
parchment paper (not optional, don’t skip)
Small, off-set spatula
2 or 3 cookie sheets or baking pans
small sauce pan (about 2 quarts)
Fine mesh sieve or strainer (for straining butter)
hand or stand mixer
pastry bag with 1/2 inch plain tip or ziploc baggie
