Preparation Instructions
Galettes are a kind of free form pie or tart. This is a rustic pastry, and isn’t too much work, once you get the hang of the pastry. In advance of class, please have the following ready:
5 oz (10 tablespoons) of butter small diced or grated with the large side of a box grater and kept cold in the fridge.
2 oz (4 tablespoons) of butter at room temperature.
Egg at room temperature.
That’s it. Do not worry about slicing apples in advance, as we will have time for this during class.
I will post the recipe before class begins for those who like to read as we go along. However, please do not use the recipe to try to “get ahead”, as it will interfere with your experience in class.
