Strawberry Cake Filling

Fruit Filling for Cake

Yield: Enough to fill an 8-inch cake

Ingredients:

  • 1/2 lb (225g) strawberries (frozen ok, another berry, or peaches are good options)
  • 1/4 cup (50g) sugar 
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/2 cup (4 fl. oz.) water 
  • 1/8 tsp salt 

Instructions:

  1. Place strawberries (or other fruit) in a saucepan with sugar, lemon juice, and salt.
  2. Add 1/4 cup of water to the fruit mixture. Mix remaining 1/4 cup of water with cornstarch.
  3. Heat the fruit on medium until sugar is dissolved. Stir with a wooden spoon.
  4. Stir in the cornstarch slurry.
  5. Cook on low until the mixture thickens and the color changes from an opaque light red to a translucent deep strawberry red color.
  6. When thick enough to coat the back of a wooden spoon or spatula it's ready.
  7. Remove from heat - Pour into an air-tight container. Let cool completely.
