In large bowl or bowl of a stand mixer fitted with a paddle attachment, beat together butter and sugars on medium speed until creamy. Beat in eggs and vanilla. In a medium bowl, whisk together flour, baking soda, cinnamon and salt. Add dry ingredients to butter and sugar in three parts. Mix on low until only streaks of flour remain.Add oats and other mix ins. Mix together on low or by hand. Drop dough by rounded tablespoonfuls onto parchment lined cookie sheets.
