Prep

Butter and eggs should be at room temperature. Other than that, there is no need to pre-measure or take any other advance steps. We will do everything together.

A note on cream of tartar: IT DOES NOT EXPIRE. Cream of tartar is a dry acid. Containers come with an expiration date because all items intended for human consumption in the USA are required to have expiration dates. Cream of tartar does not expire though. So, don’t rush out to buy a “fresh” container. I know that prior baking all the time, my cream of tartar would hang around for YEARS. There is no substitute for cream of tartar in this recipe. It serves an important purpose as a chemical and as a flavoring.

A note on butter: If you replace the shortening with butter in the recipe, your cookies will spread significantly more and be less chewy.
