Egg whites, 1/2 cup (from about 4-5 large eggs, or from a carton, but must be 100% real egg whites)

Granulated sugar, 1 cup

Granulated sugar or turbinado sugar, 1 cup (for meringues, use dark sugar for a more complex flavor)

Brown sugar, 1/3 cup

Powdered sugar, 1/2 cup

Espresso powder, 1 teaspoon (optional, can be found online)

Unsalted butter, 1/4 cup

Vanilla extract, 4 teaspoons

All-purpose flour, 1/2 cup

Cocoa powder, 1 cup

Baking powder, 1 teaspoon

Salt

Cream of tartar 1/4 teaspoon

Heavy cream, 2 cups

Mascarpone cheese, 7 oz

Dark or semi-sweet chocolate, 9 oz (about 2 cups when finely chopped)

Fresh cranberries

Rosemary

Half sheet baking pan (18x12 or 17.5x11.5)

Parchment paper, enough to line the pan 3 times

Plastic wrap

Flat kitchen towel (like a flour sack towl), at least 20 x 13 inches

Electric mixer, handheld or stand with whisk attachment

Rubber spatula

Whisk

2 or 3 large bowls, at least one of which is metal or glass

Small pot

Two piping bags

1/2 inch round piping tip

1/4 inch round piping tip

Serving platter for finished cake
