Ingredients
Almond flour, 130 grams (not almond meal)
Powdered sugar, 130 grams
Super fine sugar, 90 grams (called baker’s sugar or berry sugar)
4 large eggs
cream of tartar (found in the spice aisle)
Gel food color of your choice
Granulated sugar, less than 1 cup
Citrus juice or fruit puree, 1/4 cup (for flavoring filling)
2 medium lemons
salt
Unsalted butter, 2 oz
Heavy cream, 4 oz
White chocolate, 6 oz
Oil or extract to flavor filling

Rubber Spatula (I know most people have rubber spatulas on hand, if you are looking for an upgrade, Vollrath is the absolute best brand out there.
Fine mesh sieve or sifter
3 Piping bags
plain, round tip, about 1/3-1/2 inch in diameter
Stand mixer with whisk attachment or hand mixer.
Parchment paper or silpat mats
gel food coloring (Must be gel-type coloring. Americolor and Chefmaster are good brands.)
2 large baking trays
Toothpick
Dehumidifier (optional, if your kitchen is humid, you will either want to run a dehumidifier or crank your A/C).
