All-purpose flour (4 cups plus more for rolling)

Granulated sugar (1/4 cup)

Brown sugar (3/4 cup)

2-3 pounds tart, firm apples (honeycrisp, jonagold, melrose, granny smith, etc)

Unsalted butter (10 oz, high fat “European” style preferred)

Salt

Spices (I suggest cinnamon, nutmeg, cardamom, ground ginger and allspice. You can adjust to your taste or use an apple spice blend. Even just cinnamon will make a fabulous pie.)

Lemon juice (1 tablespoon)

Apple cider vinegar (optional for tenderizing crust)

2 whole eggs

Milk

Cornstarch
