Preparations

Before class, please grate 10 oz (20 tablespoons) of butter on the large side of a box grater and hold in the fridge or freezer. All of your butter should be COLD, but only the grated butter can go in the freezer.

Make sure you have space in your fridge for chilling the dough between folds.

Have a note pad and pen handy for taking notes.
