5 cups (700g) all purpose flour plus more for dusting work surface
Unsalted butter, 26 oz (high fat butters like Kerrygold, Tillamook or fancier European brands work best because of their high melting point)
Salt
Below is optional for making finished pastries with the rough puff pastry
Granulated sugar, 1 1/4 cup
Ground cinnamon, 2 tablespoons
Cream cheese, 1/2 package (4 ounces)
Vanilla extract
3 large eggs
Apricot or rapsberry jam

Parchment paper (not optional)
Two baking trays that will fit in your fridge.
