Strawberry Jam

Ingredients:

  • 2 pounds ripe strawberries (or raspberries, nectarines, peaches, etc)
  • 1 pound granulated sugar
  • 1/4 cup lemon juice

Instructions:

  1. Wash and pick over berries. Slice into 1/4 inch pieces.
  2. In a large, deep, and ideally wide, mix berries with sugar and lemon juice.
  3. Allow to macerate for 15-20 minutes.
  4. Cook over moderate heat. Bring to a boil and reduce heat to maintain a low boil/simmer. Stir occasionally, more frequently towards the end of the cooking process.
  5. Jam is done when it drops in sheets from a wooden spoon, or a registers a consistent 220F on a candy or instant read thermometer.
  6. Carefully pour into clean glass jars. Seal. Allow to cool and then refrigerate.
