Oatmeal Sandwich Loaf

Ingredients:

  • 1 3/4 cups (175 g) rolled oats
  • ¼ cup (2 fl oz) water or milk
  • 1 ½ (12 fl oz) cups water
  • 1 (2 1/4 tsp) packet instant yeast
  • ⅓ cup (113 g) honey
  • 1 cup (130 g) wheat flour
  • 3 cups (405 g) bread flour
  • 2 ¼ tsp fine salt or 1 tbsp kosher salt

Instructions:

  1. Soak oats in the 1/4 cup of milk or water for 10-30 minutes.
  2. In the bowl of a stand mixer, mix water, yeast, and honey. Stir in oats and let sit for 10 minutes.
  3. Add flours and salt. Mix until smooth and then knead for 2-3 minutes (or 5 minutes by hand). Check for window pane. 
  4. Cover and let rise for 30 minutes.
  5. On a piece of floured parchment, shape into and oval or rough rectangle. Cover and let rest for another 20 minutes.
  6. Shape into a loaf by gently flattening dough. Fold into third. Turn dough so seam side is down. Tuck end edges under. Place into parchment lined loaf pan, seam side down. Cover and let proof for 45-60 minutes. 
  7. 30 minutes before baking, preheat over to 350F. Sprinkle more oats on top, if desired. Bake for 30-40 minutes, until a deep brown color.

Notes:

For a richer loaf of bread, add 1/2 cup of melted butter with flour and salt.
