Preparations
Butter should be cold. 1/2 cup of your butter should be small diced or grated in advance of class. (Use the large side of a box grater to grate cold butter just like cheese.) Hold in the refrigerator.
We will need very cold water. If you do not keep ice in your house, measure out 1 cup of water and keep chilled in the refrigerator.
Make sure you have a large, clean space on your counter ready to go as your working area.
You do not need to take any other advance steps for class. Do not pre-measure or anything like that. We will do everything together, including toasting our nuts.
